It is considered a natural preservative as an acid. Citric acid is common in lemons and limes. When added to wine it gives “freshness” taste overall. Often used for balancing sweet wines.
It can also be used to create a strong sanitizing solution. Mix 2 tbsp. of citric acid and 1 tbsp. of potassium metabisulfite with 5 gallons of warm water.
